Mexican bow tie pasta



As mentioned here, I am not a huge pasta fan. However, my hubby loves it. I love Mexican. I could eat it every night. So I compromised...

Meet Mexican bow tie pasta

The Ingredients:

1 can of black beans, drained and rinsed
1/2 c frozen corn
1/4 c diced red onion
1/2 c diced tomato 
juice from 1 lime
1/2 c mayonnaise
1 c salsa of your choice
2-3 c bow tie pasta (cook 2 min's less than directed)
1 c chicken cut into bite size pieces
1/2 c shredded cheddar cheese

Combine the first six ingredients in a bowl. Chill
Mix mayo and salsa together and pour over cooked pasta. Chill
Before serving, add veggies to pasta. Toss with cheese and chicken. 
Serve cold.
*You can also omit the pasta and serve as a yummy dip with tortilla chips*

  10. What a great idea! I love mexican food too and could eat it all the time. Your mexican pasta looks delicious! You should definitely try Drybar sometime! I went to the Brentwood location but there's also one in Studio City now and another one opening in West Hollywood soon.
