PB&J Cookies


As I confessed here, 
I could live on PB&J!
HERE is the cookie version! 

Ingredients:
1 1/2 cups flour 
1/2 tsp baking powder
1/2 tsp baking soda 
1/2 tsp salt 
1 c creamy peanut butter 
1 stick unsalted butter
1/3 c brown sugar
1/3 c granulated sugar
1 egg
1tsp vanilla extract
2 c strawberry jam

Directions:
Preheat oven to 350 degrees. 

Mix all ingredients together. 

Roll dough into 1 inch balls and place on cookie sheet.

Bake for 10 mins. Remove from oven, and indent centers with a spoon. Return to oven for 6 mins.

Transfer cookies to wire rack and cool completely. 

Once cookies are cool, spoon 1/2 tsp jam into each indentation. 

Sprinkle with sugar.

ENJOY!

  4. Yum! We do the peanut butter blossoms with a kiss on top sometime, and putting jam on top would be a great switch up:) Thanks for the idea!
