Landyn and I have been a part of a Mommy group since she was 6 months old. Every Wednesday we take turns hosting a play date. Each holiday that passes, the momma's go all out and we celebrate! Yesterday we had a Valentine's party and brought along some funfetti cupcakes to share!
Ingredients
1 1/4 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup sugar
6 tablespoons unsalted butter, room temperature
1 egg, plus one egg white
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup milk
3 tablespoons rainbow sprinkles
Heat oven to 350 degrees F. Line a cupcake pan with paper liners.
In a large bowl, mix flour, baking powder and salt. Set aside. In separate bowl, beat the sugar and butter until well combined, about 2-3 minutes. Add egg and egg white, one at a time. Add vanilla and almond extracts. Gradually add flour mixture and milk. Stir in rainbow sprinkles.
Fill cupcake liners about 2/3 full. Bake for about 18-20 minutes or until a toothpick inserted in the middle comes out clean. Remove from pan and cool completely on a wire cooling rack before frosting.

About 1/3 cup and 3 T of softened butter
10 oz cream cheese
3 cups powdered sugar
1 1/2 tsp vanilla extract

Beat butter and cream cheese together until well blended. Mix in the vanilla. Gradually add the powdered sugar into the batter. Beat until smooth.
We wrapped them up with ribbon and Valentine tags!

Cuccakes look fab and the packaging is fab! A mommy group sounds like so much fun. If i ever become a SAHM, I can't wait to do Mommy and Me and Playdates/Playgroups!
